Yucatan Gastronomic Federation’s Culinary Extravaganza in Brazil

The Yucatan Gastronomic Federation has embarked on a promotional tour in Brazil to showcase Yucatán cuisine. The tour includes a series of workshops, lectures, week-long events, and business meetings with entrepreneurs. It also involves agreements with academic institutions as part of the effort to internationalize local dishes.

Carlos Guillermo Aguirre Aguilar, the president of the Yucatan Gastronomic Federation, stated that Yucatecan chef, Edwin Esteban Chulim Pech, is representing the federation in Brazil. This initiative coincides with World Mexican Gastronomy Day, which took place on November 16th.

Chulim Pech has initiated a range of activities aimed at promoting Yucatán's regional cuisine. These activities include signing academic agreements, conducting Yucatecan cooking workshops, and preparing paired dinners in two of Brazil's culturally significant gastronomic cities.

In Recife, Yucatecan dishes will be featured at the renowned CAJA restaurant as part of their seventh-anniversary celebration. Chulim Pech expressed that Yucatecan cuisine should reflect the flavors and aromas of Mayan culture and the love for the land when presented internationally. He emphasized that the stews are a testament to the skill of the artisans who prepare them and a representation of the rich ancient culinary history.

In São Paulo, a variety of gastronomic activities will be conducted with the Mexican consulate. These events will be attended by entrepreneurs, diplomatic staff, and ambassadors from various countries. A Yucatecan gastronomic proposal will be presented at the Metzi restaurant, recognized as one of the top 50 best restaurants in Latin America.

The tour will also involve finalizing a work agreement with the National Commercial Learning Service, SENAC, the largest private professional training institution in Brazil. The tour will conclude with a business mission involving Yucatán entrepreneurs, facilitated by the Mercosur Chamber of Commerce.

The president of the Yucatan Gastronomic Federation expects the tour to conclude on November 30, with successful outcomes and valuable experiences gained.
