Castacán, a special cut of pork from the Yucatan region of Mexico, is derived from the stomach of the Pelón pig. This breed is smaller and has a grayer skin tone compared to its American counterpart. The unique flavor of the castacán meat comes from the pig's diet, which consists solely of Huachim and corn fodder.

Creating castacán is a labor-intensive process that requires a high level of craftsmanship. The process begins with the selection of pork cuts, typically from the belly or loin, which are then sliced into thin strips. These strips are generously salted and left to rest so that the salt can permeate the meat, aiding in dehydration and preservation.

Once the meat has lost some of its moisture and reached the desired firmness, it is fried in hot oil until golden and crispy.

This delicacy is prepared in small pieces, each covered with a thin layer of skin that is slowly fried to create a crispy exterior and a soft interior. Castacán is most commonly served in tacos, accompanied by red onion and habanero pepper.
