Their lifestyle, including their diet, has been the subject of extensive research. It is known that their diet was primarily plant-based, consisting of crops like corn, beans, squash, chili, and cocoa.

Among these, squash, a highly nutritious fruit, was a staple. It is renowned for its high content of essential vitamins and minerals. Squash is particularly rich in vitamin A, which is vital for maintaining healthy vision, boosting the immune system, and promoting healthy skin. It also contains vitamins C and E, and antioxidants like beta-carotene, giving it antioxidant properties. Another significant benefit of squash is its high fiber content, which aids digestion and contributes to a feeling of fullness, making it beneficial for weight management.

The Mayans utilized not only the pulp of the squash but also its seeds, commonly known as pumpkin seeds. According to historical records from the Yucatán state, the Mayans used to prepare a type of tamale with chaya, pumpkin seeds, and tomato. These seeds are protein-rich and contain unsaturated fatty acids, as per information from the University of Florida. Other health benefits of pumpkin seeds include their high magnesium content, which helps regulate blood pressure and strengthen bone health, and their high zinc content, crucial for the immune system, reproduction, and cell growth. They are also a source of antioxidants such as vitamin E and carotenoids, which combat inflammation and prevent chronic diseases.

Pumpkin seeds are not only rich in protein but also provide a good amount of fiber, aiding digestion and promoting a feeling of fullness, which can help with weight management. They also contain plant-based omega-3 fatty acids, crucial for cardiovascular health.

In the cuisine of Yucatán, where the Mayans lived hundreds of years ago, several dishes are based on pumpkin seeds. These include Sikil P’ak, a sauce made with raw pumpkin seeds, tomato, habanero chili, cilantro, and onion; Kaaxil sikil, a stew made with local pumpkin seeds, garlic, pepper, cinnamon, annatto, kale, and peppermint; and Papadzules, tortillas filled with egg and served with a pumpkin seed sauce. These recipes highlight the versatility and nutritional value of pumpkin seeds in a balanced diet.
