On May 14th, at the El Cantoral concert venue, Gwendal Poullennec, the international director of the Michelin guides, honored a select group of Mexican restaurants. This acknowledgement not only shines a light on the unique talent of each chef, but also applauds the rich culinary diversity of Mexico as a whole.
A Michelin star is one of the most prestigious awards in the culinary world. It is bestowed upon restaurants that demonstrate exceptional culinary skill and ranges from one to three stars, each representing a different level of quality: one star signifies 'high quality', two stars 'excellent', and three stars 'exceptional'. These accolades are granted based on five key criteria: the quality of the ingredients used, the chef's command of cooking techniques, the harmony of flavors, the chef's personal touch in the dish, and consistency across both time and the entire menu.
